Puto Recipe

Ingredients:


  • 2 1/2 cups of flour
  • 2 cups white sugar
  • 1 cup water
  • 1 tbsp. baking powder
  • 3 tsp. yeast
  • 2 cups evaporated milk (substitute with coconut milk or fresh milk)
  • 2 eggs
  • 3/4 cup melted butter or margarine
  • cheddar cheese for toppings
  • water for steaming

Method:

  1. In a mixing bowl, combine flour, sugar, baking powder, yeast, butter, milk, egg and water. Mixed thoroughly.
  2. Pour in mixture into individual cupcake molds just about 3/4 level of the cup.
  3. Put one piece cubed cheese on top.
  4. Put the steamer on and water to boil.
  5. Arrange the molds with mixture in a steamer plate.
  6. Steam for about 20 minutes.
  7. Insert a knife inside to check if its ready if the knife comes out clean.
  8. Remove from mold.
  9. Serve and enjoy!

Cassava Cake Recipe

Another way of making a different kind of cake made from cassava. This recipe is very easy to follow and if you are not in the Philippines you can buy frozen grated cassava in asian or Filipino shops.

Ingredients
  • 1 kg grated cassava
  • 4 cups coconut milk
  • 500 ml evaporated milk
  • 3 pcs. eggs
  • 2 tbsp margarine or butter melted
  • 50 grms cheese cheddar, grated
  • 250 ml condensed milk
  • 1 cup white sugar or brown to give color
  • 2 tbsp flour

Instructions
  1. In a bowl,  combine cassava, margarine, 125 ml of condensed milk , 125 ml evaporated milk, 5 tbsp cheese, sugar and eggs. Mix well.
  2. Add 2 cups coconut milk, mix well.
  3. Preheat oven to 180 degrees Celsius
  4. Grease baking dish and pour in the mixture.
  5. Bake for 60 minutes. After 60 minutes take out from the oven and set aside.

Topping:


  1. Heat saucepan and combine 2 tbsp of sugar and 2 tbsp of flour.
  2. Pour in 125 ml condensed milk and mix well
  3. Add 2 tbsp of sugar and 2 tbsp of cheese. Stir constantly.
  4. Add the remaining 2 cups of coconut milk. Stir constantly for 5 minutes or until thickens.
  5. Pour the mixture over the baked cassava  and spread it even.
  6. Using the  egg white, glaze the topping and brush it on top of cassava cake
  7. Set oven to broil mode.
  8. Put cassava cake until light brown.
  9. Top with grated cheese.
  10. Enjoy!

CheeseCake

Cheesecake recipe


 

Ingredients:


For Crust:
  • 5 tbsp. unsalted butter, melted
  • 12 pieces graham crackers      
  • 1/4 cup sugar
  • 1/4 tsp.salt
For Filling
  • 1 1/2 cup  cream cheese, room temperature
  • 1 1/2 cups sugar
  • 1 tsp.lemon zest grated,
  • 1 tbsp. lemon juice
  • 1/2 tsp. salt
  • 4  eggs
  • 1 cup sour cream
 

Method:

Crust:
  1. Preheat oven to 190 degrees Celsius.
  2. Crust: Butter a springform pan.
  3. In a food processor, put graham crackers until it forms fine crumbs.
  4. Add the butter, sugar and salt and on processor to combine
  5. Place crumb mixture into bottom of pan and press it about 1 inch up.
  6. Bake for up to 12-15 minutes or until set.
  7. Let it cool and set aside.
  8. Reduce oven temperature to 160 degrees Celsius.
Filling:
  1. Using an electric mixer, beat cheese on medium until fluffy.
  2. Add sugar gradually until fluffy.
  3. Add in lemon zest, lemon juice, and salt.
  4. Put in eggs one at a time.
  5. Add sour and beat.
 
  • Boil water in a kettle.
  • Wrap the bottom half of pan with foil.
  • Pour in the filling and place in a roasting pan.
  • Pour in the boiling water halfway side of the springform pan.
  • Bake until set for about 1 and a quarter hours or until set in center.
  • Remove from water, let it cool.
  • Run a knife around the edge.
  • Cover and chill before serving.
  • Add some jam or fruit of your preference for topping.

Moist Banana Cake

Ingredients
 
1/2 cup butter
1 cup caster sugar
2 eggs
2 1/4 cups flour
1/2 tsp baking soda
1 cup mashed bananas (2-3 bananas)
1/4 cup sour milk (substitute: 2tsp vinegar add to milk and set aside for 10 mins)
1 tsp vanilla
 
Method:
 
  1. Preheat oven to 180 degrees.
  2. Cream butter and sugar together in a large bowl.
  3. Add eggs and mix well.
  4. Add flour and baking soda and mix until combined.
  5. Add bananas, milk and vanilla and mix well.
  6. Pour batter into two prepared 8 inch pans.
  7. Bake at 350 degrees for 25-30 minutes, or until a toothpick comes out with just a few crumbs.
  8. Cool in pan for 5-10 minutes, then remove to cooling rack to finish cooling.
  9. Enjoy!
