Ingredients:
For Crust:
- 5 tbsp. unsalted butter, melted
- 12 pieces graham crackers
- 1/4 cup sugar
- 1/4 tsp.salt
For Filling
- 1 1/2 cup cream cheese, room temperature
- 1 1/2 cups sugar
- 1 tsp.lemon zest grated,
- 1 tbsp. lemon juice
- 1/2 tsp. salt
- 4 eggs
- 1 cup sour cream
Method:
Crust:
- Preheat oven to 190 degrees Celsius.
- Crust: Butter a springform pan.
- In a food processor, put graham crackers until it forms fine crumbs.
- Add the butter, sugar and salt and on processor to combine
- Place crumb mixture into bottom of pan and press it about 1 inch up.
- Bake for up to 12-15 minutes or until set.
- Let it cool and set aside.
- Reduce oven temperature to 160 degrees Celsius.
Filling:
- Using an electric mixer, beat cheese on medium until fluffy.
- Add sugar gradually until fluffy.
- Add in lemon zest, lemon juice, and salt.
- Put in eggs one at a time.
- Add sour and beat.
- Boil water in a kettle.
- Wrap the bottom half of pan with foil.
- Pour in the filling and place in a roasting pan.
- Pour in the boiling water halfway side of the springform pan.
- Bake until set for about 1 and a quarter hours or until set in center.
- Remove from water, let it cool.
- Run a knife around the edge.
- Cover and chill before serving.
- Add some jam or fruit of your preference for topping.
