                             Escabeche Recipe( Sweet and sour Fish)


 Escabeche Recipe:

Another Filipino Dish favourite

Ingredients:

  • 1 whole fish, cleaned
  • 1 pc red bell pepper (red capsicum)
  • 1 medium size onion, slice
  • 1/2 cup vinegar
  • 1/2 cup water
  • 3 ripe tomatoes, sliced into small pieces
  • 1 medium size carrots, slice into strips
  • ginger, slice into strips
  • 4 cloves garlic, crushed or minced
  • one pinch whole peppercorn
  • 1/2 tsp. salt
  • spring onion
  • 4 tsp sugar
  • cooking oil

Method:

  1. Heat cooking oil and fry fish until golden brown on each side, then set aside.
  2. In a clean pan, saute garlic and onion.
  3. Add the tomato until cooked and soft.
  4. Add the ginger,whole peppercorn,carrots and capsicum.
  5. In a cup, combine water, vinegar, sugar and salt and mix until sugar and salt dissolve.
  6. Pour in the pan with the tomatoes and other ingredients.
  7. Let it boil. Simmer for 2 minutes. Add water if needed. Adjust taste on your own preference.
  8. Put the fish in place and cover with the mixture. Simmer for 2 minutes.
  9. Turn off heat.
  10. Serve and enjoy!
