Escabeche Recipe:
Another Filipino Dish favourite
Ingredients:
- 1 whole fish, cleaned
- 1 pc red bell pepper (red capsicum)
- 1 medium size onion, slice
- 1/2 cup vinegar
- 1/2 cup water
- 3 ripe tomatoes, sliced into small pieces
- 1 medium size carrots, slice into strips
- ginger, slice into strips
- 4 cloves garlic, crushed or minced
- one pinch whole peppercorn
- 1/2 tsp. salt
- spring onion
- 4 tsp sugar
- cooking oil
Method:
- Heat cooking oil and fry fish until golden brown on each side, then set aside.
- In a clean pan, saute garlic and onion.
- Add the tomato until cooked and soft.
- Add the ginger,whole peppercorn,carrots and capsicum.
- In a cup, combine water, vinegar, sugar and salt and mix until sugar and salt dissolve.
- Pour in the pan with the tomatoes and other ingredients.
- Let it boil. Simmer for 2 minutes. Add water if needed. Adjust taste on your own preference.
- Put the fish in place and cover with the mixture. Simmer for 2 minutes.
- Turn off heat.
- Serve and enjoy!
